During lockdown, we called on the talents of our team of volunteers. Among them, Bruno Rascalou, president of the Occitanie Regional Committee and a cookery teacher (trainer of the famous Cyril Lignac!), has agreed to share his recipes with all the Federation's members! So, to your stoves for the first recipe: a grated apple and lemon tart!

Preparation
1. Let us make the shortcrust pastry:
- In a mixing bowl, put the flour, softened butter, egg yolk and the pinch of salt.
- Knead with your fingertips and add a little water while continuing to knead until you reach the desired consistency (adjust the amount of water needed). Do not overwork your dough, as it would become hard when baked.
- Then roll out your dough to a thickness of about 3 mm.
2. Let us make the filling:
- Preheat your oven to 210°.
- Zest your lemons and squeeze them to obtain 10 cl of lemon juice.
- Pour the juice and zest into a mixing bowl.
- Peel and grate your apples, adding them and mixing them in with the lemon juice as you go so that the apples do not oxidise.
- In a bowl, whisk the eggs with the sugar and add this mixture to the grated apples.
- Mix everything well, spread the mixture over your pastry base and level the filling with the back of a spoon. Bake for about 35 to 40 minutes. Your tart should be a nice golden colour.
- Finally, let your tart cool slightly before taking it out of the tin and dust it with a veil of icing sugar.
Your grated apple and lemon tart is now ready to enjoy, warm or cold!
Do not hesitate to tell us about any difficulties you met and above all send us photos of your tart! Let us each share, from home, the conviviality and happiness of making a dish!
